Superbowl Chicken Skewers

The typical Superbowl fare includes chips and dip, chicken wings, pizza and beer -- foods loaded with fat and calories that most of us don't need right after the holidays. But there's a solution! Offer a veggie tray with hummus as the dip substitute; make an easy, lower-calorie guacamole, and these yummy chicken skewers to shave out those extra, unwanted calories while enjoying Superbowl Sunday.

Ingredients for Skewers:

  • 2/3 cup low-sodium chicken broth

  • 2 Tablespoons rice wine vinegar

  • 1/4 cup reduced-sodium soy sauce

  • 1 Tbsp. fresh ginger, minced

  • 1 clove fresh garlic, minced

  • 2 tsp. brown sugar

  • Juice of 1/2 lime

  • 1 lb. boneless, skinless chicken thighs

  • 3 Green onions, chopped

Ingredients Peanut Dipping Sauce

  • 1/3 cup peanut butter

  • 2 Tbsp. lite soy sauce

  • 1/4 cup low sodium chicken broth

  • 2 teaspoons brown sugar

  • 1 Tbsp. fresh ginger, minced

  • 1 clove fresh garlic, minced

  • 1 large pinch of crushed red pepper flakes

Preparation:

  1. Combine first 7 ingredients. Add chicken tenders, tossing to coat in marinade; cover and refrigerate for 1-2 hours. Soak wood skewers in water for at least 20 minutes before grilling. Thread 1 chicken tender on each skewer and discard the extra marinade.

  2. Cook the chicken on a grill or nonstick pan (coated with 1 teaspoon oil) over medium-high heat for about 4 minutes per side, until fully cooked through.

  3. For peanut sauce, combine all ingredients except peanut butter and blend with a hand immersion blender or in a food processor; mix until garlic and ginger are finely minced. Add peanut butter and blend until smooth.

  4. Top chicken skewers with green onions and serve with peanut sauce.
