/Even my husband (who shivers at the thought of eating cauliflower) loves this roasted cauliflower recipe. Roasting the cauliflower brings out a nuttiness and sweetness that’s really great!
Roasting the cauliflower brings out a nuttiness and sweetness that’s really tasty!
Ingredients:
1 large (about 2 lbs.) fresh cauliflower, quartered & cut into florets
1 Tablespoon olive oil
½ teaspoon salt
½ teaspoon black pepper
1 teaspoon of your favorite dried herbs (such as thyme, rosemary or Mrs. Dash) or 1-2 teaspoons smoked paprika for a smoky, BBQ variation
Preparation:
Preheat oven to 400*F.
Spread cauliflower in baking pan.* Drizzle with oil and toss with your hands. Sprinkle with spices; toss again to thoroughly mix.
Bake at 400*F for 18 minutes. Pierce cauliflower with a fork to check doneness. Cook 2-4 minutes, as needed to desired doneness.
Transfer to a serving bowl and serve. Makes 4 servings.
*To decrease cleanup, line baking sheet with foil before tossing cauliflower with oil.
